Thyme is one of the most important herbs in European cooking and has similar properties and replicable taste to Indian Ajwain. As with most western spices and herbs, Thyme is difficult to come by in many cities and towns, making it a matter of availability and convenience to add Thyme to your kitchen garden. It goes very well with soups and also as a part of condiments for several dishes.

Sowing
Thyme can be grown by sowing seeds directly into a well-draining container or a raised bed.
Fill a container with draineage holes with a rich but well-draining growing mix and sprinkle the thyme seeds in top.
Cover the sprinkled thyme seeds with 1-2 cm of potting mix. Don’t cover it too deep.
Water immediately using a misting spray so as not too diplace the topsoil. Drench the growing medium generously
Sow the thyme seeds evenly and cover it 1-2 inches of soil and keep the surface moist till the seeds germinate in 2-3 weeks
Keep your pots in semi shade while the seeds germinate. Once the germination happens, prune away any seedlings that are not growing in a healthy manner to make space for the healthy seedlings.
Caring
Once the seedlings have grown, you can either keep you thyme in direct sun or semi shade for better flavour.
Water your Thyme plant moderately using a watering can to ensure an even shower and fertilise it with a handful of vermicompost every month.
Harvest thyme by cutting the top of the leaves, never harvest more than one third of the plant.
